Cake Layers:
- 2 cups (250 g) all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup (170 g) unsalted butter (softened)
- 1 ½ cups (300 g) sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup (240 ml) buttermilk
Whipped Cream Filling:
- 2 cups (480 ml) heavy cream (chilled)
- 4 tbsp powdered sugar
- 1 tsp vanilla extract
Cherry Drip Topping:
- 1 ½ cups fresh cherries (pitted)
- ½ cup (100 g) sugar
- 2 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water (slurry)
Decoration:
- Fresh whole cherries with stems
- Whipped cream rosettes
- Mint leaves
- Caramelized sugar crumbs or crushed praline
- Edible gold leaf (optional)
- White edible flowers (optional for decoration only)
- Bake the Cake – Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans. Whisk together dry ingredients. Cream butter and sugar, add eggs and vanilla. Alternate dry mix and buttermilk, then bake and cool.
- Make the Whipped Cream – Beat chilled cream with sugar and vanilla until stiff peaks form.
- Prepare Cherry Drip – Heat cherries, sugar, and lemon juice. Add cornstarch slurry, cook until thickened and cool slightly.
