Cupcakes:
- 1 1/4 cups (160g) all-purpose flour
- 1 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (120ml) buttermilk
- 1/2 tsp white vinegar
- 1 tsp vanilla extract
- 1/2 cup (120ml) vegetable oil
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1/2 tsp red gel food coloring
Cream Cheese Frosting:
- 8 oz (225g) cream cheese, softened
- 1/4 cup (60g) unsalted butter, softened
- 2 cups (250g) powdered sugar
- 1 tsp vanilla extract
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
- Combine buttermilk, vinegar, vanilla extract, and red food coloring in another bowl.
- Beat sugar and oil in a large mixing bowl, then add egg.
- Alternate adding dry ingredients and buttermilk mixture to the sugar mixture, mixing until just combined.
- Divide batter into cupcake liners and bake for 18-20 minutes. Let cool.
- For the frosting, beat cream cheese and butter until creamy. Add powdered sugar and vanilla, mix until smooth.
