For the Wings:
- 2 lbs (900 g) chicken wings
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
For the Mango Chili Sauce:
- 1 ripe mango, peeled and diced
- 2–3 tbsp honey
- 1–2 tsp chili flakes or sriracha (adjust to desired heat)
- 1 tbsp lime juice
- 1 tsp grated fresh ginger
- 1 clove garlic, minced
- Pinch of salt
- Preheat oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
- Prepare the wings: Pat the chicken wings dry using paper towels to ensure crispiness. Toss them in olive oil, salt, black pepper, and smoked paprika until evenly coated. Arrange the wings in a single layer on the prepared baking sheet.
- Bake the wings: Bake the wings for 35–40 minutes, flipping them halfway through the cooking time to ensure even browning. They should be golden brown and crispy when done.
- Prepare the mango chili sauce: In a blender or food processor, combine the diced mango, honey, chili flakes or sriracha (adjust to your heat preference), lime juice, grated ginger, minced garlic, and a pinch of salt. Blend everything until smooth and well combined.
- Coat the wings: Remove the baked wings from the oven and transfer them to a large bowl. Toss the wings with the mango chili sauce until fully coated in the flavorful glaze.
- Serve: Arrange the coated wings on a serving platter. Optionally, garnish with chopped cilantro or green onions. Serve immediately while hot, perfect as an appetizer or a main dish for any occasion.
Notes
- For extra crispy wings, you can broil them for 2-3 minutes after baking, watching carefully to avoid burning.
- Adjust the amount of chili flakes or sriracha according to your preferred spice level.
- Use ripe mangoes for the best sweetness and smooth sauce texture.
- Leftover sauce can be refrigerated and used as a dipping sauce or marinade.
- These wings can be made gluten-free as long as the chili flakes or sriracha sauce are certified gluten-free.
