Instructions

  1. Prepare the Wings: Preheat oven to 400°F (200°C). Pat chicken wings dry with paper towels to ensure crispiness. Toss wings with olive oil, salt, pepper, garlic powder, and smoked paprika evenly to coat. Arrange wings in a single layer on a baking sheet lined with parchment paper or a wire rack to promote even cooking.
  2. Bake the Wings: Place the baking sheet in the preheated oven and bake wings for 35–40 minutes. Flip halfway through cooking to ensure both sides become golden and crispy. Check for an internal temperature of 165°F (74°C) for safety.
  3. Make the Mango Chili Sauce: In a small saucepan, combine diced mango, honey or brown sugar, chili flakes or sriracha, lime juice, minced garlic, and salt. Simmer the mixture over medium heat for 5–7 minutes until the mango softens and flavors meld. Use a blender or immersion blender to purée the sauce until smooth. Taste and adjust seasoning if necessary.
  4. Toss Wings in Sauce: Transfer the baked wings to a large mixing bowl. Pour the prepared mango chili sauce over the wings and toss gently but thoroughly until each wing is coated with the sauce.
