  • 1 large ripe mango, peeled and diced

  • ¼ cup fresh cilantro, chopped

Mango Lime Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • ½ tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Marinade: In a bowl, mix the olive oil, lime zest, lime juice, ground cumin, paprika, salt, and freshly cracked black pepper. Toss the chicken breasts in this mixture ensuring they are evenly coated. Let it marinate for at least 10 minutes to absorb flavors.
  2. Cook the Chicken: Heat a grill pan or skillet over medium heat. Place the marinated chicken breasts in the pan and cook for 5–6 minutes on each side until they are golden brown and cooked through. The internal temperature should reach 75°C (165°F). Remove from heat and let the chicken rest for 5 minutes before slicing.
  3. Make the Dressing: In a small bowl or jar, whisk together the olive oil, fresh lime juice, honey, Dijon mustard, salt, and black pepper until the dressing is well emulsified and smooth.
  4. Assemble the Salad: In a large salad bowl, arrange the mixed salad greens, diced mango, sliced avocado, thinly sliced red onion, and chopped fresh cilantro.
  5. Add Chicken and Dressing: Top the salad with the sliced grilled chicken. Drizzle the mango lime dressing evenly over the salad.
