Ingredients

Scale

Dry Ingredients

  • 1½ cups (210 g) all-purpose unbleached flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Cookie Dough

  • ½ cup (120 g) unsalted butter, softened
  • ⅓ cup (55 g) maple sugar
  • ½ teaspoon vanilla extract
  • 1 egg

Filling

  • ½ cup (125 ml) maple butter
  • 2 tablespoons unsalted butter, softened

Finishing

  • Powdered sugar for dusting

Instructions

  1. Mix Dry Ingredients: In a bowl, combine the all-purpose flour, baking powder, and salt. Stir together until evenly mixed to prepare the base for the cookie dough.
  2. Cream Butter Mixture: In a separate bowl, use an electric mixer to cream together the softened unsalted butter, maple sugar, and vanilla extract until the mixture is light and fluffy. Then, add the egg and continue mixing until well incorporated.
  3. Combine Dough: Gradually add the dry ingredients to the butter and sugar mixture on low speed. Mix just until the dough starts to form. Remove the dough from the bowl and press it into a disk shape by hand. Wrap it tightly with plastic wrap and refrigerate for 1 hour to chill and firm up.
  4. Preheat Oven: When ready to bake, preheat your oven to 350°F (180°C) and prepare baking sheets by lining them with parchment paper or silicone mats.
  5. Roll and Cut Cookies: Roll out the chilled dough on a lightly floured surface to about ⅛ inch (3 mm) thickness. Use cookie cutters to cut out your desired shapes. Make a small hole in the center of half the cookies to create sandwich tops.
  6. Bake Cookies: Place the cookies on the prepared baking sheets and bake for 10 to 12 minutes, or until the edges are lightly golden. Remove from oven and let the cookies cool completely on wire racks.
  7. Prepare Filling: Whip together maple butter and the remaining softened butter until smooth and creamy. Place this filling in the refrigerator for 30 minutes to firm slightly.
  8. Assemble Cookies: Spread a generous amount of the maple butter filling onto the whole cookies without holes. Top each with a cookie that has a hole in the center, gently pressing together to form sandwiches.
  9. Finish and Store: Dust the assembled cookies with powdered sugar for a delicate, sweet finish. Store the cookies in an airtight container to maintain freshness.

Notes

  • Refrigerating the dough helps prevent spreading and enhances cookie texture.
  • Maple sugar can be substituted with light brown sugar, but maple sugar intensifies the maple flavor.
  • Ensure both butters are softened to ease mixing for the filling.
  • Use parchment paper or silicone baking mats for easy removal and cleanup.
  • Cookies can be stored in an airtight container at room temperature for up to 5 days or frozen for up to 1 month.
