Ingredients

Scale

Dry Ingredients

  • 2 cups (250g) all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil or melted butter
  • 2 large eggs (room temperature)
  • ¾ cup (180ml) milk (room temperature)
  • 2 tsp vanilla extract

Chocolate Mixture

  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp warm water or milk (for the cocoa mix)

Instructions

  1. Prepare Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt to ensure even distribution of the leavening agents and salt.
  2. Mix Wet Ingredients: In a separate large bowl, whisk the sugar, eggs, vegetable oil (or melted butter), milk, and vanilla extract together until the mixture is smooth and uniform.
  3. Combine Wet and Dry: Add the dry ingredient mixture into the wet ingredients and mix gently with a spatula or spoon until just combined; avoid overmixing to keep the muffins tender.
  4. Divide Batter: Separate the batter evenly into two bowls.
  5. Make Chocolate Batter: To one portion of the batter, add the cocoa powder and 1 tablespoon of warm water or milk. Stir gently until fully incorporated, yielding a smooth chocolate batter.
  6. Layer the Batters: Spoon alternating dollops of the vanilla and chocolate batter into the lined muffin cups to create a layered effect.
  7. Create Marble Effect: Take a toothpick or skewer and gently swirl it through the batters in each muffin cup to create a beautiful marbled appearance without overblending.
  8. Bake Muffins: Place the muffin pan in a preheated oven at 175°C (350°F) and bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool and Serve: Remove the muffins from the oven and allow them to cool completely in the pan before transferring them to a wire rack. Serve and enjoy!

Notes

  • Use room temperature eggs and milk for better batter consistency.
  • Do not overmix the batter to avoid dense muffins.
  • You can substitute vegetable oil with melted butter for a richer flavor.
  • Ensure the oven is fully preheated to 175°C (350°F) before baking for even cooking.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
