  • 500g cooked starchy potatoes (peeled & mashed)
  • 1 egg yolk
  • 120g all-purpose flour (plus extra for dusting)
  • ½ tsp salt

Filling:

  • 125g burrata cheese (drained well and chopped)
  • 1 tbsp grated Parmesan

‘Marry Me’ Sauce:

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ tsp chili flakes (optional)
  • 150ml heavy cream
  • 40g sun-dried tomatoes, chopped
  • 30g grated Parmesan
  • Salt & pepper to taste
  • Fresh basil for garnish

Instructions

  1. Gnocchi Dough: Combine mashed potatoes, egg yolk, salt, and flour into a soft dough. Avoid overmixing.
  2. Filling: Divide dough into balls, fill with burrata-Parmesan mix, seal into dumplings.
  3. Cooking Gnocchi: Simmer filled gnocchi in salted water until they float. Drain on paper towels.
  4. ‘Marry Me’ Sauce: Sauté garlic in olive oil, add chili flakes, cream, sun-dried tomatoes. Simmer and add Parmesan, salt, and pepper.
  5. Final Touch: Coat cooked gnocchi in the sauce, garnish with basil, olive oil, and Parmesan.
