  • 1 cup all-purpose flour
  • 2 tbsp matcha powder
  • 2 tbsp sugar
  • 3 large eggs
  • 2 cups milk (warm)
  • 3 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract

For the Filling:

  • 2 cups heavy whipping cream (cold)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 68 Oreo cookies (crushed into small chunks)

For Decoration:

  • Matcha glaze (matcha + icing sugar + a little milk)
  • Whole Oreo cookies
  • Whipped cream swirls

Instructions

  1. Make the Crepe Batter – In a bowl, whisk together flour, matcha powder, and sugar. Add eggs and whisk until smooth. Slowly add milk while whisking to avoid lumps. Mix in melted butter and vanilla extract. Chill the batter in the fridge for 30 minutes.
  2. Cook the Crepes – Heat a nonstick pan on medium. Lightly grease with butter. Pour a thin layer of batter, swirl to coat the pan evenly. Cook until edges lift slightly, flip, and cook 30 seconds more. Repeat until you have 15–18 crepes. Cool completely.
  3. Prepare the Filling – Whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fold in crushed Oreo cookies.
  4. Assemble the Cake – Place one crepe on a plate, spread a thin layer of Oreo cream. Add another crepe on top, repeat layering until all crepes are used. Frost the outside with the remaining cream.
  5. Decorate – Drizzle with matcha glaze so it drips down the sides. Pipe small whipped cream swirls on top. Add whole Oreo cookies for garnish.
