Indulge in a unique twist on the classic tiramisu with this Matcha Tiramisu recipe. Layers of delicate matcha sponge cake, creamy mascarpone filling, and a hint of green tea flavor come together to create a delightful dessert.

For the Matcha Sponge:

  • 4 large eggs (separated)
  • ½ cup granulated sugar
  • ¾ cup cake flour (sifted)
  • 2 tbsp matcha (green tea powder)
  • ¼ tsp baking powder
  • Pinch of salt

For the Cream Filling:

  • 1 cup mascarpone cheese (room temperature)
  • 1 ¼ cups heavy whipping cream (cold)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

For the Syrup:

  • 1 cup hot water
  • 1 tsp matcha powder
  • 2 tbsp sugar

For Topping:

  • 12 tbsp matcha powder (for dusting)
  • Whipped cream or coffee cream (optional decoration)

Instructions

  1. Make the Sponge Cake Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan. Beat egg yolks with half the sugar until pale and thick. In another bowl, whisk egg whites with the rest of the sugar until stiff peaks form. Sift together flour, baking powder, salt, and matcha. Gently fold into egg yolk mixture. Fold in egg whites carefully to keep the batter airy. Pour into the pan and bake for 12–15 minutes. Let cool and cut into two equal layers.
  2. Prepare the Syrup Dissolve matcha powder and sugar in hot water. Let cool.
  3. Make the Cream Filling Whip heavy cream and powdered sugar until soft peaks form. In another bowl, beat mascarpone with vanilla until smooth. Fold whipped cream into mascarpone until well combined.
  4. Assemble the Tiramisu Place one sponge layer on the bottom of a dish. Brush with matcha syrup. Spread half of the mascarpone cream over it. Add the second sponge layer, brush with syrup, then spread remaining cream. Refrigerate for at least 4 hours.
  5. Decorate Dust with matcha powder before serving. Add whipped cream or coffee cream on top.

Notes

  • You can adjust the sweetness by altering the amount of sugar in the cream filling.
  • For a stronger matcha flavor, increase the amount of matcha powder in the sponge or syrup.
