  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Add the marinated chicken slices and cook for 6–8 minutes, stirring occasionally, until the chicken is golden brown with slight charring and fully cooked through.
  3. Prepare the Creamy Feta Tzatziki: In a bowl or using a food processor, combine crumbled feta cheese, plain Greek yogurt, grated cucumber (with excess moisture squeezed out), finely minced garlic, olive oil, lemon juice, finely chopped fresh dill, and black pepper to taste. Blend or mix until smooth and creamy.
  4. Warm the Pita Breads: Slightly warm the pita breads in a dry skillet or oven to make them soft and pliable for assembling the gyros.
  5. Assemble the Gyros: Spread a generous amount of creamy feta tzatziki over each warm pita. Top with cooked chicken slices, shredded lettuce, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives if using.
