For the Chicken

  • lb boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1½ tsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ¾ tsp salt
  • ½ tsp black pepper

For the Creamy Feta Sauce

  • ¾ cup crumbled feta cheese
  • ½ cup plain Greek yogurt
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 23 tbsp water (to thin)
  • Black pepper, to taste

For the Bowl

  • 4 pita breads, warmed and cut into wedges
  • 1 cup cooked rice or quinoa (optional base)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup Kalamata olives, sliced
  • ¼ cup fresh parsley, chopped

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, salt, and black pepper. Add the chicken pieces and toss them well to coat. Cover and marinate for at least 20 minutes, or refrigerate for up to 12 hours for more flavor.
  2. Cook the chicken: Heat a grill pan or skillet over medium-high heat. Place the marinated chicken onto the pan and cook for 5–7 minutes per side until golden brown and fully cooked through. Remove from heat and let the chicken rest for 5 minutes before slicing into strips.
  3. Make the creamy feta sauce: In a blender or food processor, combine crumbled feta cheese, plain Greek yogurt, garlic clove, olive oil, lemon juice, and black pepper. Blend until smooth and creamy, adding 2 to 3 tablespoons of water gradually to reach desired consistency.
  4. Prepare the bowl: If using, place cooked rice or quinoa at the base of serving bowls. Arrange warm pita wedges, sliced chicken, cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, and chopped fresh parsley artfully on top.
  5. Finish & serve: Drizzle the creamy feta sauce generously over the top of the bowl and serve immediately while the chicken and pita are warm.
