For the Mediterranean Chicken:
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2½ tbsp olive oil

- ½ tsp paprika

For the Creamy Feta Sauce:
- ¾ cup Greek yogurt
- ½ cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 small garlic clove, grated
- Black pepper, to taste
For the Pita Bowl:
- 3–4 pita breads, lightly toasted and cut into wedges
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup shredded romaine or mixed greens
- ½ red onion, thinly sliced
- ¼ cup Kalamata olives, sliced
- Fresh parsley or dill, chopped
- Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss until well coated. Marinate for at least 20 minutes, or up to 2 hours for deeper flavor.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the chicken pieces for 5–6 minutes, stirring occasionally, until golden brown and cooked through. Remove from heat and set aside.
- Prepare the Creamy Feta Sauce: In a blender or mixing bowl, combine Greek yogurt, crumbled feta cheese, olive oil, lemon juice, grated garlic, and black pepper. Blend or whisk until smooth and creamy.
- Prepare the Pita Bowl Base: Arrange toasted pita wedges in serving bowls. Add the shredded greens, cherry tomatoes, diced cucumber, thinly sliced red onion, and sliced Kalamata olives around the pita wedges.
