Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Zest and juice of 1 lemon
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

For Feta Cream:

  • ½ cup Greek yogurt
  • ¼ cup crumbled feta cheese
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt and pepper, to taste

For Wraps:

  • 4 small pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • Optional: mixed greens or arugula

Instructions

  1. Marinate chicken: In a bowl, combine olive oil, oregano, lemon zest and juice, minced garlic, salt, and black pepper. Add the thinly sliced chicken breasts and toss to coat evenly. Let the chicken marinate for 15–20 minutes to absorb all the flavors.
  2. Cook chicken: Heat a skillet over medium-high heat. Place the marinated chicken slices in the skillet and cook for 5–6 minutes on each side, or until the chicken is golden brown and fully cooked through.
  3. Prepare feta cream: In a small bowl, mix together Greek yogurt, crumbled feta cheese, lemon juice, olive oil, salt, and pepper. Stir until the mixture is smooth and creamy, adjusting seasoning as needed.
  4. Warm wraps: Briefly heat the pita breads or flatbreads in a dry skillet or oven until warm and pliable, making them easier to fold.
  5. Assemble wraps: Spread a generous layer of the prepared feta cream onto each warm wrap. Layer with cooked chicken slices, cherry tomatoes, diced cucumber, thinly sliced red onion, chopped parsley, and optional mixed greens or arugula.
  6. Serve: Fold the wraps securely and serve immediately while the chicken is still warm for the best taste and texture experience.

Notes

  • You can substitute chicken breasts with chicken thighs for a juicier option.
  • Use whole wheat pita or flatbreads to boost the fiber content.
  • Adding a drizzle of tahini or a sprinkle of sumac can enhance the Mediterranean flavor.
  • Leftover chicken can be stored in the refrigerator for up to 2 days.
  • For a spicier kick, add crushed red pepper flakes to the marinade.
