Instructions

  1. Prepare the salad: In a large bowl, combine the drained chickpeas, diced avocado, halved cherry tomatoes, diced cucumber, finely chopped red onion, pitted and sliced kalamata olives, chopped parsley, and crumbled feta cheese. Gently mix to evenly distribute the ingredients without mashing the avocado.
  2. Make the dressing: In a small bowl, whisk together olive oil, fresh lemon juice, lemon zest, minced garlic, Dijon mustard, salt, and black pepper until the mixture is fully emulsified, creating a bright and tangy dressing.
  3. Toss the salad: Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly. Be careful to toss gently to avoid smashing the avocado pieces.
