- 2 cloves garlic, finely grated
- Zest of 1 lemon
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- Salt, to taste
- Black pepper, to taste
Lemon Garlic Hummus
- 1 can (400 g) chickpeas, drained and rinsed
- 2 tbsp tahini
- 2 cloves garlic
- 3 tbsp fresh lemon juice
- 3 tbsp olive oil
- ½ tsp ground cumin
- Salt, to taste
Grazing Board Items
- Pita bread or pita chips
- Cucumber slices
- Cherry tomatoes
- Kalamata olives
- Roasted red peppers
- Marinated artichoke hearts
- Feta cheese cubes
- Fresh herbs (parsley, dill, or mint)
- Prepare the Lemon Garlic Yogurt Dip: In a bowl, whisk together Greek yogurt, finely grated garlic, lemon zest, lemon juice, extra virgin olive oil, salt, and black pepper until the mixture is smooth and well combined. Chill the dip in the refrigerator for 15 minutes to allow the flavors to meld and intensify.
- Prepare the Lemon Garlic Hummus: In a food processor, combine the drained chickpeas, tahini, whole garlic cloves, fresh lemon juice, olive oil, ground cumin, and salt. Blend the ingredients until smooth and creamy, adding 1 to 2 tablespoons of water as needed to achieve the desired consistency.
- Assemble the Grazing Board: Arrange the two prepared dips in small serving bowls on a large platter or wooden board. Surround the dips with pita bread or pita chips, slices of cucumber, cherry tomatoes, Kalamata olives, roasted red peppers, marinated artichoke hearts, and cubes of feta cheese.
- Finish & Serve: Drizzle a little olive oil over the dips and sprinkle fresh herbs such as parsley, dill, or mint on top. Serve the grazing board immediately, or cover and refrigerate until ready to enjoy.
Notes
- For a vegan version, substitute Greek yogurt with a dairy-free yogurt alternative and omit feta cheese or use a plant-based cheese.
- To add extra crunch, include nuts like toasted pine nuts or almonds on the board.
- Leftover dips can be stored in airtight containers in the refrigerator for up to 3 days.
- Adjust the garlic quantity if you prefer a milder or stronger garlic flavor.
- Serve with warm pita bread for a comforting contrast or crispy pita chips for added texture.
