  • 1 cup red bell pepper, diced
  • 1 cup eggplant, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried oregano

For the Pita Wraps

  • 4 whole wheat or regular pita breads, halved
  • 1/2 cup shredded lettuce or mixed greens
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper to prepare for roasting the vegetables.
  2. Roast the Vegetables: Toss the diced zucchini, red bell pepper, and eggplant with olive oil, dried oregano, salt, and black pepper. Spread them in an even layer on the prepared baking sheet and roast for 20–25 minutes until they are tender and lightly caramelized.
  3. Sauté Onions: While vegetables roast, heat olive oil in a skillet over medium heat. Add finely diced onion and cook for 3–4 minutes until softened and translucent.

  5. Cook Ground Beef: Add ground beef to the skillet, breaking it apart with a spatula. Cook for 6–8 minutes until browned and cooked through.
  6. Season Beef Mixture: Stir in ground cumin, smoked paprika, ground cinnamon, dried oregano, salt, and black pepper. Add the diced tomatoes and simmer the mixture for 3–4 minutes until it thickens slightly, melding the flavors.
  7. Warm Pita Breads: Heat pita breads in a dry skillet or in the oven for 2–3 minutes until warm and pliable.
  8. Assemble Wraps: Fill each warm pita half with a generous portion of the roasted vegetables, a scoop of the spiced ground beef filling, shredded lettuce or mixed greens, and sprinkle with crumbled feta cheese.
