For the Lemon Honey Feta Cream

  • 1 cup feta cheese, crumbled
  • ½ cup full-fat Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 clove roasted garlic
  • 1 tbsp lemon juice
  • 12 tbsp water (to thin for spreading)

For Assembly

  • 4 large soft flatbreads or wraps
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • ¼ cup thinly sliced red onion
  • Optional: extra honey drizzle

Instructions

  1. Cook the Ground Beef: Heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant. Add the ground beef, breaking it apart with a spatula, and cook for 6–8 minutes until browned. Mix in paprika, cumin, oregano, coriander, chili flakes (if using), salt, pepper, and tomato paste. Continue cooking for another 2 minutes to combine the flavors. Finish by stirring in fresh lemon juice and chopped parsley. Remove from heat and set aside.
  2. Prepare the Lemon Honey Feta Cream: In a blender or food processor, combine crumbled feta cheese, Greek yogurt, olive oil, honey, roasted garlic, and lemon juice. Blend until smooth and creamy. Add 1–2 tablespoons of water to thin the mixture to a spreadable consistency.
  3. Warm the Wraps: Heat the flatbreads or wraps in a dry skillet or oven just until they become soft and pliable for easy folding.
  4. Assemble the Wraps: Spread a generous layer of the lemon honey feta cream evenly over each warm flatbread. Add cooked ground beef, then top with shredded lettuce, halved cherry tomatoes, diced cucumber, and thinly sliced red onion. Drizzle extra honey over the filling if you like a touch more sweetness. Fold the wraps tightly and serve immediately.
