Ingredients

Scale

For the Roasted Vegetables

  • 1 small eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

For the Board

  • ½ cup crumbled feta cheese
  • ½ cup Kalamata olives
  • 1 cup cherry tomatoes
  • 1 cup cucumber slices
  • 1 tablespoon fresh parsley, chopped
  • 46 small pita breads or lavash, sliced
  • Optional: roasted nuts (almonds, walnuts)

Instructions

  1. Roast the Vegetables: Preheat your oven to 400°F (200°C). Toss the diced eggplant, zucchini, red and yellow bell peppers, and sliced red onion with olive oil, dried oregano, salt, and black pepper. Spread the vegetables evenly on a baking sheet and roast for 25–30 minutes, stirring halfway through to ensure even cooking, until they are tender and slightly caramelized.
  2. Assemble the Board: On a large serving platter or wooden board, artistically arrange the roasted vegetables alongside crumbled feta cheese, Kalamata olives, cherry tomatoes, cucumber slices, and pita or lavash pieces. Create a colorful and inviting presentation for easy grazing.
  3. Garnish: Sprinkle freshly chopped parsley over the entire board for a burst of color and freshness. Optionally, add a handful of roasted nuts such as almonds or walnuts to introduce an extra layer of crunch and flavor.
  4. Serve: Serve immediately as a vibrant appetizer platter, perfect for brunch or casual entertaining, inviting everyone to enjoy the mix of Mediterranean flavors and textures.

Notes

  • You can substitute pita or lavash with your favorite flatbread or breadsticks.
  • For a vegan version, replace feta cheese with a plant-based cheese alternative.
  • Roast nuts separately and add just before serving to retain crunch.
  • Adjust seasoning with extra oregano or a squeeze of lemon juice to brighten flavors.
  • Leftover roasted vegetables can be refrigerated for up to 3 days and enjoyed in salads or wraps.
