Instructions

  1. Prepare Tart Shell Dough: In a mixing bowl, combine cold cubed butter with powdered sugar. Add the egg, all-purpose flour, and a pinch of salt. Mix until a smooth dough forms. Chill the dough in the fridge for at least 30 minutes to firm up.
  2. Shape and Bake Tart Shells: Preheat the oven to 170°C (340°F). Press the chilled dough evenly into tartlet molds. Bake for about 15-20 minutes or until the tart shells turn golden brown. Remove from oven and allow to cool completely in the molds before filling.
  3. Make Caramel Filling: In a saucepan over medium heat, melt the sugar slowly until it turns a rich amber color. Carefully add the warm heavy cream while stirring continuously to combine. Remove from heat, then stir in butter and a pinch of salt until smooth and glossy. Let the caramel cool slightly but remain pourable.
