Cheesecake Filling:

  • 225g (8 oz) cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream or whipping cream, chilled

Strawberry Topping:

  • 1 cup fresh strawberries, sliced
  • 1 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press about 2 tbsp into the bottom of each mini cheesecake mold, ramekin, or silicone cup. Chill in the fridge while preparing filling.
  2. Make the Filling: Beat softened cream cheese, powdered sugar, and vanilla until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until fully combined and fluffy.
  3. Assemble: Spoon or pipe the cheesecake filling over the chilled crusts in each mold, smoothing the tops. Refrigerate for at least 3 hours or overnight until set.
  4. Prepare Strawberry Topping: Mix sliced strawberries, sugar, and lemon juice. Let sit for 10–15 minutes to macerate and release juices.
  5. Serve: Top each mini cheesecake with a spoonful of strawberry mixture before serving. Optionally, garnish with a small mint leaf.
