  • 1/4 cup sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped fresh strawberries

For the Strawberry Crunch Topping:

  • 10 to 12 Golden Oreos, crushed
  • 2 tablespoons freeze-dried strawberries, crushed
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Prepare the crust – Preheat oven to 350°F (175°C). Line a mini muffin tin with paper liners. Combine graham cracker crumbs, granulated sugar, and melted butter in a small bowl. Press 1 tablespoon of the mixture into each liner and bake for 5–7 minutes until set. Cool completely.
  2. Make the cheesecake filling – In a bowl, beat cream cheese with sugar until silky. Mix in sour cream, egg, and vanilla until well blended. Fold in the fresh chopped strawberries.
  3. Bake the cheesecake bites – Spoon filling over the cooled crusts. Bake for 15–18 minutes until the centers are mostly set. Let cool at room temperature, then refrigerate for at least 2 hours.
  4. Prepare the strawberry crunch topping – Mix crushed Golden Oreos, crushed freeze-dried strawberries, and melted butter until crumbly.
