Sponge Base (Ladyfinger-Style):
- 4 large eggs (separated)
- 100 g (½ cup) sugar
- 1 tsp vanilla extract
- 100 g (¾ cup) all-purpose flour
- Pinch of salt
Coffee Soak:
- 1 cup strong brewed espresso or coffee
- 2 tbsp sugar
- 2 tbsp coffee liqueur (optional)
Mascarpone Cream:
- 250 g (1 cup) mascarpone cheese, room temp
- 250 ml (1 cup) heavy cream, cold
- 80 g (⅔ cup) powdered sugar
- 1 tsp vanilla extract
Topping:
- Make the sponge bases: Preheat oven. Whisk egg yolks with sugar, add vanilla. Whip egg whites with salt and sugar, fold together with flour. Bake and cool.
- Prepare the coffee soak: Mix espresso, sugar, and liqueur. Let it cool.
- Make the mascarpone cream: Whip cream, beat mascarpone with sugar and vanilla, fold together.
- Assemble the mini cakes: Brush sponge with coffee soak, pipe mascarpone cream on top, dust with cocoa.
- Chill and serve: Refrigerate for at least 2 hours. Dust with cocoa before serving.

- For a non-alcoholic version, omit the coffee liqueur.
