Filling
- 200 g feta cheese (block, not crumbled)
- 2 tbsp cream cheese
- 2 tbsp fig jam
- ½ tsp chili flakes or a few drops of chili oil
- 1 tsp honey (optional, for balance)
Pastry & Assembly
- 1 sheet all-butter puff pastry (approx. 250 g), thawed
- 1 egg, beaten (for egg wash)
- Flour for dusting
To Finish
- Fresh thyme or microgreens
- Drizzle of hot honey or chili oil (optional)
- Crushed pistachios (optional)
- Preheat Oven: Set to 200°C (400°F). Line a baking sheet with parchment.
- Make the Lava Filling: In a small bowl, mash feta and cream cheese together until smooth but still thick. In another bowl, mix fig jam, chili flakes, and honey.
- Assemble the Center: On a lightly floured surface, roll out the puff pastry slightly. Spoon the feta mixture in the center, top with the fig-chili jam. Pull pastry up and around to seal into a tight bomb. Flip seam-side down.
- Chill: Place in fridge for 15–20 minutes to firm up.
- Egg Wash & Bake: Brush with beaten egg. Bake for 25–30 minutes, or until deeply golden, crisp, and puffed.
- Serve Hot: Let rest for 5 minutes, then slice open at the table for the molten reveal. Garnish with thyme, hot honey drizzle, and crushed pistachios if desired.
