Pastry & Assembly

  • 1 sheet all-butter puff pastry (approx. 250 g), thawed
  • 1 egg, beaten (for egg wash)
  • Flour for dusting

  • Crushed pistachios (optional)

Instructions

  1. Preheat Oven: Set to 200°C (400°F). Line a baking sheet with parchment.
  2. Make the Lava Filling: In a small bowl, mash feta and cream cheese together until smooth but still thick. In another bowl, mix fig jam, chili flakes, and honey.
  3. Assemble the Center: On a lightly floured surface, roll out the puff pastry slightly. Spoon the feta mixture in the center, top with the fig-chili jam. Pull pastry up and around to seal into a tight bomb. Flip seam-side down.
  4. Chill: Place in fridge for 15–20 minutes to firm up.
  5. Egg Wash & Bake: Brush with beaten egg. Bake for 25–30 minutes, or until deeply golden, crisp, and puffed.
  6. Serve Hot: Let rest for 5 minutes, then slice open at the table for the molten reveal. Garnish with thyme, hot honey drizzle, and crushed pistachios if desired.
