Ingredients

Scale

Chicken Marinade and Cooking

  • 1 pound boneless, skinless chicken thighs, cut into strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Rice and Vegetables

  • 2 cups cooked basmati or jasmine rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped

Creamy Garlic Feta Sauce

  • 1/2 cup Greek yogurt
  • 1/4 cup crumbled feta cheese
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare and cook the chicken: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken strips and season them with garlic powder, paprika, dried oregano, salt, and black pepper. Cook the chicken, stirring occasionally, until it is golden brown and cooked through, about 8 to 10 minutes.
  2. Make the creamy garlic feta sauce: In a small bowl, combine 1/2 cup Greek yogurt, 1/4 cup crumbled feta cheese, minced garlic clove, lemon juice, olive oil, salt, and black pepper. Mix well until the sauce is smooth and creamy.
  3. Assemble the gyro rice bowls: Divide the cooked basmati or jasmine rice evenly among four bowls. Top each bowl with the cooked chicken, halved cherry tomatoes, diced cucumber, thinly sliced red onion, pitted kalamata olives, and crumbled feta cheese.
  4. Drizzle and garnish: Generously drizzle the creamy garlic feta sauce over each bowl. Finish by garnishing with freshly chopped parsley for added color and flavor.

Notes

  • You can substitute chicken thighs with chicken breasts if preferred, but thighs remain juicier and more flavorful.
  • For a spicier kick, add a pinch of red pepper flakes to the chicken seasoning.
  • Use freshly cooked rice for best texture, or warmed leftover rice works well too.
  • The creamy feta sauce can be made ahead and refrigerated for up to 2 days.
  • This dish can be customized with additional toppings like sliced avocado or roasted red peppers.
