For the Tart Base

  • 1 sheet puff pastry, thawed 🥐
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 250 ml (1 cup) crushed tomatoes
  • 2 tbsp tomato paste
  • 75 g ‘nduja (spicy spreadable pork sausage) 🌶️
  • 1 tsp dried oregano
  • Salt & black pepper, to taste

For Assembly

  • 1 whole burrata (cold, drained) 🧀
  • Fresh basil, for garnish 🌿
  • Chili flakes (optional)

Instructions

  1. Prepare the spicy tomato base: In a saucepan, heat olive oil and sauté garlic until fragrant. Add crushed tomatoes, tomato paste, ‘nduja, oregano, salt, and pepper. Simmer for 10–12 min until thickened and rich. Let cool slightly.
  2. Score & prep pastry: Place puff pastry on the tray. Score a 1 cm border around the edge and prick the center with a fork to prevent puffing.
  3. Assemble & bake: Spread the spicy tomato-‘nduja mixture inside the scored border. Bake for 20–25 minutes until golden and crisp.
  4. Add the drama: Remove from oven and let cool for 2 minutes. Carefully place the cold burrata in the center. Garnish with fresh basil and optional chili flakes.
  5. Serve immediately: Slice into squares and let everyone scoop a bit of the creamy center with every spicy, flaky bite.
