Dough:
- 3 cups (375g) all-purpose flour or bread flour
- ¼ cup (50g) sugar
- 1 ½ tsp salt
- 1 tsp ground cinnamon (optional)
- 1 tsp instant yeast
- 1 ¼ cups (300ml) warm water or milk
- 2 tbsp vegetable oil or melted butter
Add-Ins:
- 1 cup (150g) mixed dried fruits (raisins, sultanas, chopped apricots, cranberries, dates)
- ½ cup (75g) chopped nuts (optional)
- Prepare the Dough: In a large mixing bowl, combine flour, sugar, salt, cinnamon, and yeast. Stir in warm water (or milk) and oil until a sticky dough forms. Add dried fruits and nuts, mixing until evenly distributed.
- Rise the Dough: Cover the bowl and let the dough rise at room temperature for 10–12 hours or overnight until doubled and bubbly.
- Shape and Second Rise: Scrape the dough onto a floured surface, shape into a loaf, and place in a greased loaf pan. Let it rise again until puffy, about 45–60 minutes.
- Bake: Bake at 180°C (350°F) for 35–40 minutes until golden brown and hollow-sounding when tapped.
- Cool and Serve: Cool completely before slicing to enjoy!

- For added flavor, try soaking the dried fruits in rum or juice before adding to the dough.
