Ingredients

Scale

For the Chicken Patties

  • 1 lb ground chicken
  • 1 egg
  • ½ cup panko breadcrumbs
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste

For the Maple Mustard Sauce

  • 3 tbsp Dijon mustard
  • 1 ½ tbsp whole grain mustard
  • 2 tbsp pure maple syrup
  • 1 tbsp mayo
  • Pinch of cayenne pepper (optional)

For Assembly

  • 4 pretzel buns, soft and lightly toasted
  • 4 slices Swiss cheese
  • 1 small red onion, thinly sliced
  • 1 cup shredded green cabbage or coleslaw mix
  • ½ cup sauerkraut, drained
  • 2 tbsp butter (for toasting buns)

Instructions

  1. Prepare Sauce: In a small bowl, whisk together Dijon mustard, whole grain mustard, maple syrup, mayonnaise, and a pinch of cayenne pepper if using. Refrigerate the sauce until ready to serve to let the flavors meld.
  2. Make Patties: In a large mixing bowl, combine ground chicken, egg, panko breadcrumbs, Dijon mustard, smoked paprika, garlic powder, salt, and black pepper. Mix gently until everything is well incorporated. Form the mixture into four evenly sized patties.
  3. Cook Burgers: Heat a grill pan or skillet over medium heat. Cook the chicken patties for 4 to 5 minutes on each side, or until the internal temperature reaches 165°F (74°C). During the last minute of cooking, place a slice of Swiss cheese on each patty to melt.
  4. Toast Buns: Spread butter evenly on the cut sides of the pretzel buns. Toast them in a hot skillet until they turn golden brown and slightly crispy.
  5. Assemble Burgers: Spread a generous amount of the prepared maple mustard sauce on both the top and bottom halves of each toasted pretzel bun. Layer with a cheesy chicken patty, then top with sauerkraut, shredded cabbage, and thin slices of red onion.
  6. Serve: Serve the assembled burgers warm alongside your choice of fries, potato wedges, or a traditional German-style potato salad for a complete Oktoberfest-inspired meal.

Notes

  • Ensure chicken patties are cooked thoroughly to 165°F (74°C) for safety.
  • For a spicier kick, increase the cayenne pepper in the maple mustard sauce.
  • Use panko breadcrumbs for a lighter texture; regular breadcrumbs can be substituted if needed.
  • Soft pretzel buns add authenticity and enhanced flavor but regular burger buns can be used as an alternative.
  • Drain sauerkraut well to avoid soggy buns.
