For the Pie

  • 1 pre-baked pie crust
  • ¼ cup butter
  • 1 cup sugar
  • ¼ cup flour
  • ½ cup cocoa powder
  • 2 cups milk
  • 3 egg yolks
  • 1 tsp vanilla extract

For the Meringue

  • 3 egg whites
  • ¼ tsp cream of tartar
  • ½ cup sugar

Instructions

  1. Prepare the Filling – In a saucepan, melt butter over medium heat. Stir in sugar, flour, and cocoa powder until combined. Slowly whisk in milk and cook, stirring, until thickened.
  2. Add Yolks – Lightly beat yolks, temper with a little hot mixture, then whisk back into pan. Cook for 2–3 minutes until creamy. Remove from heat, stir in vanilla, and pour into baked crust.
  3. Make the Meringue – Beat egg whites with cream of tartar until foamy. Add sugar gradually and whip to stiff peaks. Spread over chocolate filling, sealing to edges.
  4. Bake – Bake at 350°F (175°C) for 10–12 minutes until meringue is lightly browned. Cool completely before slicing and serving.
