For the Pie
- 1 pre-baked pie crust
- ¼ cup butter
- 1 cup sugar
- ¼ cup flour
- ½ cup cocoa powder
- 2 cups milk
- 3 egg yolks
- 1 tsp vanilla extract
For the Meringue
- 3 egg whites
- ¼ tsp cream of tartar
- ½ cup sugar
- Prepare the Filling – In a saucepan, melt butter over medium heat. Stir in sugar, flour, and cocoa powder until combined. Slowly whisk in milk and cook, stirring, until thickened.
- Add Yolks – Lightly beat yolks, temper with a little hot mixture, then whisk back into pan. Cook for 2–3 minutes until creamy. Remove from heat, stir in vanilla, and pour into baked crust.
- Make the Meringue – Beat egg whites with cream of tartar until foamy. Add sugar gradually and whip to stiff peaks. Spread over chocolate filling, sealing to edges.
- Bake – Bake at 350°F (175°C) for 10–12 minutes until meringue is lightly browned. Cool completely before slicing and serving.
