Ingredients

Scale

For the Pumpkin Bars

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (15 oz) pumpkin puree

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream (optional, for desired consistency)

Instructions

  1. Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. Prepare wet mixture: In a large bowl, beat together granulated sugar, brown sugar, oil, and eggs until smooth. Stir in vanilla and pumpkin puree.
  4. Combine: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  5. Bake: Spread batter evenly in the prepared pan. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  6. Make frosting: Beat cream cheese and butter until smooth and creamy. Add powdered sugar gradually, then mix in vanilla. Add heavy cream if needed for a smoother, spreadable texture.
  7. Frost and serve: Spread frosting evenly over cooled bars. Cut into squares or rectangles and serve.
