For the Pumpkin Bars
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 can (15 oz) pumpkin puree

- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream (optional, for desired consistency)
- Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
- Prepare wet mixture: In a large bowl, beat together granulated sugar, brown sugar, oil, and eggs until smooth. Stir in vanilla and pumpkin puree.
- Combine: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Bake: Spread batter evenly in the prepared pan. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- Make frosting: Beat cream cheese and butter until smooth and creamy. Add powdered sugar gradually, then mix in vanilla. Add heavy cream if needed for a smoother, spreadable texture.
