  • 1 cup (230g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature

Instructions

  1. Preheat Oven: Preheat oven to 175°C (350°F). Grease and flour two 8-inch round cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, cream butter and sugar until light and fluffy (about 3–4 minutes).
  4. Add Eggs and Vanilla: Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Incorporate Dry Ingredients: Add dry ingredients in 3 parts, alternating with milk (begin and end with flour).
  6. Combine Batter: Mix until just combined. Do not overmix!
  7. Bake: Divide batter evenly into pans. Bake for 25–30 minutes or until golden and a toothpick comes out clean.
  8. Cool and Frost: Cool cakes completely before frosting.
