Feta and Topping
- 8 ounces feta cheese block
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1/2 teaspoon red chili flakes
- 1 teaspoon dried oregano
Mixed Olives and Vegetables
- 1 cup mixed olives (kalamata and green)
- 1/2 cup cucumber slices
- 1/2 cup cherry tomatoes
- 1 tablespoon fresh parsley, chopped
Pita Chips
- 2 pita breads, cut into triangles
- 1 tablespoon olive oil (for pita chips)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the feta and pita chips.
- Prepare Feta: Place the block of feta cheese in a small baking dish. Drizzle it evenly with 2 tablespoons of olive oil and 2 tablespoons of honey. Sprinkle 1/2 teaspoon of red chili flakes and 1 teaspoon of dried oregano evenly over the top.
- Bake Feta: Bake the feta cheese in the oven for 12 to 15 minutes, or until it is warm and slightly softened but still holds its shape.
- Prepare Pita Chips: While the feta is baking, arrange the pita triangles on a baking sheet. Brush them lightly with 1 tablespoon of olive oil, then sprinkle evenly with 1/2 teaspoon garlic powder and 1/2 teaspoon paprika.
- Bake Pita Chips: Place the pita triangles in the oven and bake for 8 to 10 minutes, until they turn golden brown and crispy.
- Assemble Platter: Arrange the hot honey baked feta in the center of a serving platter. Surround it with the mixed olives, freshly baked pita chips, cucumber slices, and cherry tomatoes.
- Garnish and Serve: Sprinkle the chopped fresh parsley over the entire platter for a finishing touch. Serve immediately for the best flavor and texture.
Notes
- For extra heat, increase the red chili flakes to 1 teaspoon.
- Use fresh oregano instead of dried for a brighter herbaceous note.
- Try adding a squeeze of lemon juice over the feta before serving for added acidity.
- Pita chips can be made ahead and stored in an airtight container to maintain crispiness.
- This platter pairs well with a light Greek white wine like Assyrtiko.
