  • 1 teaspoon baking powder

Wet Ingredients:

  • ½ cup (120ml) vegetable oil (or melted butter)
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • ½ cup (120ml) fresh orange juice
  • 2 tablespoons orange zest (about 2 oranges)
  • ½ cup (120g) plain yogurt or sour cream
  • 1 teaspoon vanilla extract

Optional Orange Glaze:

  • ½ cup (60g) powdered sugar
  • 12 tablespoons fresh orange juice

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk oil, sugar, and eggs until smooth and pale. Add orange juice, orange zest, yogurt, and vanilla. Mix well.
  4. Fold in Dry Ingredients: Gradually fold in the dry ingredients until just combined (do not overmix).
  5. Bake: Pour the batter into the loaf pan and smooth the top. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Glaze: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack. If desired, mix powdered sugar with orange juice to make a glaze and drizzle it over the cooled cake.
