Dry Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients:
- ½ cup (120ml) vegetable oil (or melted butter)
- 1 cup (200g) granulated sugar
- 2 large eggs
- ½ cup (120ml) fresh orange juice
- 2 tablespoons orange zest (about 2 oranges)
- ½ cup (120g) plain yogurt or sour cream
- 1 teaspoon vanilla extract
Optional Orange Glaze:
- ½ cup (60g) powdered sugar
- 1–2 tablespoons fresh orange juice
- Preheat the Oven: Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, whisk oil, sugar, and eggs until smooth and pale. Add orange juice, orange zest, yogurt, and vanilla. Mix well.
- Fold in Dry Ingredients: Gradually fold in the dry ingredients until just combined (do not overmix).
- Bake: Pour the batter into the loaf pan and smooth the top. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Glaze: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack. If desired, mix powdered sugar with orange juice to make a glaze and drizzle it over the cooled cake.
