For the Ground Beef
- 1 lb ground beef
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp coriander
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 1 tbsp tomato paste
- 1 tbsp lemon juice
For the Grilled Vegetables
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1/2 red onion, sliced
- 1 tbsp olive oil (for vegetables)
- Salt and black pepper to taste
For the Garlic Hot Honey Feta Cream
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 2 tbsp hot honey
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Black pepper to taste
Other
- Cook the Ground Beef: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks until fully cooked through.
- Season the Beef: Add paprika, cumin, coriander, garlic powder, onion powder, salt, and black pepper to the beef. Stir in the tomato paste and continue cooking for another 2 to 3 minutes to blend the flavors. Finish by adding a tablespoon of lemon juice, then remove from heat and set aside.
- Prepare the Vegetables: Toss the sliced zucchini, bell pepper, and red onion with 1 tablespoon olive oil, salt, and pepper. Grill the vegetables over medium-high heat or sauté them in a pan until tender and lightly charred, about 6 to 8 minutes. Set aside.
- Make the Garlic Hot Honey Feta Cream: In a bowl, combine crumbled feta cheese, Greek yogurt, hot honey, minced garlic, lemon juice, and black pepper. Stir until smooth and creamy.
- Warm the Flatbreads: Heat the flatbreads in a pan or oven until soft and pliable, about 2 to 3 minutes per side.
- Assemble the Flatbreads: Spread a generous layer of the garlic hot honey feta cream over each flatbread. Top with the cooked ground beef followed by the grilled vegetables.
- Serve: Optionally garnish with fresh herbs such as parsley or oregano, slice, and serve the flatbreads warm for best flavor.
Notes
- You can substitute flatbreads with pita or naan bread if preferred.
- Adjust the amount of hot honey in the feta cream according to your desired spice level.
- For a smoky flavor, grill the vegetables over an outdoor grill instead of sautéing.
- Leftover beef mixture can be stored in the fridge for up to 3 days and reheated.
- To make this recipe gluten-free, use gluten-free flatbreads.
