Pasta
- 350 g pasta (penne, fusilli, or rigatoni)
Sautéed Vegetables
- 2 tablespoons olive oil or butter
- 3 cloves garlic, minced
- 300 g mushrooms, sliced
- 3 cups fresh spinach
Sauce
- ½ cup heavy cream or half-and-half
- ¾ cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- ½ teaspoon red pepper flakes (optional)
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta and set aside.
- Sauté the Mushrooms: Heat olive oil or butter in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the sliced mushrooms and cook for 5–7 minutes until they are browned and tender. Season with salt and black pepper to your taste.
- Add Spinach & Cream: Stir fresh spinach into the skillet and cook until it wilts. Pour in the heavy cream and bring the mixture to a gentle simmer, allowing the flavors to meld together.
- Combine: Add the cooked pasta back into the skillet along with the reserved pasta water as needed to loosen the sauce. Stir in the freshly grated Parmesan cheese and red pepper flakes if using. Cook for another 2–3 minutes while stirring until the sauce is creamy and everything is well combined.
- Serve: Taste the pasta and adjust seasoning with salt and pepper if necessary. Serve hot, garnished with extra Parmesan cheese if desired for added richness and flavor.
