A refreshing and vibrant Pear & Cranberry Couscous Salad combining sweet diced pear, tart dried cranberries, crunchy toasted nuts, and creamy feta. Tossed in a light olive oil and apple cider vinegar dressing, this salad makes a perfect light lunch or side dish, served chilled or at room temperature.

For the Salad

  • 1 cup couscous
  • 1 cup hot water or vegetable broth
  • 1 ripe pear, diced
  • ¼ cup dried cranberries
  • ¼ cup toasted pecans or walnuts, chopped
  • 2 green onions, thinly sliced
  • ¼ cup crumbled feta
  • 2 tbsp chopped fresh parsley

For the Dressing

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp honey
  • Salt & black pepper, to taste

Instructions

  1. Prepare the Couscous: Place the couscous in a heatproof bowl and pour hot water or vegetable broth over it. Cover the bowl and let it sit for 5 minutes until the couscous absorbs the liquid and becomes tender. Fluff with a fork to separate the grains.
  2. Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar or lemon juice, honey, salt, and black pepper until well combined.
  3. Combine Salad Ingredients: In a large bowl, mix the fluffed couscous with diced pear, dried cranberries, toasted nuts, sliced green onions, and chopped fresh parsley, ensuring even distribution.
  4. Toss the Salad: Pour the prepared dressing over the salad mixture and gently toss to coat all ingredients evenly with the dressing.
  5. Add Feta and Serve: Sprinkle crumbled feta cheese on top of the salad. Serve chilled or at room temperature for the best flavor.

Notes

  • For a nut-free version, omit the toasted pecans or walnuts or replace with toasted sunflower seeds.
  • You can substitute the pear with apple or peaches depending on seasonality.
