For the Shrimp

  • 1 lb (450g) large shrimp, peeled & deveined
  • 12 tsp minced habanero (adjust to spice preference)
  • 2 tbsp olive oil
  • 1 tbsp honey or brown sugar
  • 2 cloves garlic, minced
  • Salt & pepper to taste

For the Kabobs

  • 1 cup fresh pineapple, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • Wooden or metal skewers (if wooden, soak in water 30 minutes)

Instructions

  1. Marinate the Shrimp: In a bowl, combine the peeled and deveined shrimp with minced habanero, olive oil, honey, minced garlic, salt, and pepper. Toss everything well to coat the shrimp evenly. Cover and marinate in the refrigerator for 20 to 30 minutes to let the flavors infuse.
  2. Assemble the Kabobs: Alternate threading shrimp, pineapple chunks, and pieces of red and green bell peppers onto the skewers. Leave small gaps between each piece to ensure even cooking on the grill.
  3. Preheat Grill: Heat your grill or grill pan to medium-high. Lightly oil the grill grates to prevent sticking and help achieve beautiful grill marks.
  4. Grill the Kabobs: Place the assembled kabobs on the grill. Cook each side for 2 to 3 minutes or until the shrimp turn pink, opaque, and develop a slight char. For extra flavor, optionally brush the kabobs with any leftover marinade while grilling.
