Ingredients

Scale

Shrimp Kabobs

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 cup fresh pineapple chunks
  • 12 tsp habanero chili, minced (adjust to taste)
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Skewers (wooden or metal)

For Serving

  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Prepare the Marinade: In a bowl, combine olive oil, lime juice, garlic, minced habanero, salt, and pepper to create a flavorful marinade that will infuse the shrimp with a spicy and tangy taste.
  2. Marinate the Shrimp: Toss the peeled and deveined shrimp in the marinade, ensuring each piece is well-coated. Let it sit for 15–30 minutes to absorb the flavors deeply.
  3. Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning on the grill. Then, alternate threading shrimp and pineapple chunks onto the skewers to create colorful kabobs.
  4. Grill the Kabobs: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 2–3 minutes per side, or until the shrimp turn pink, opaque, and develop a slight char for optimal flavor and texture.
  5. Serve: Arrange the grilled kabobs on a serving platter. Garnish with freshly chopped cilantro and serve with lime wedges on the side for a zesty finish.

Notes

  • Adjust the amount of habanero chili according to your spice tolerance; habaneros are very hot.
  • Soaking wooden skewers prevents them from burning on the grill.
  • You can substitute fresh pineapple with canned pineapple chunks, but fresh is preferred for better texture and flavor.
  • For an indoor alternative, grill the kabobs using a grill pan or broil them in the oven.
  • Serve with a side of rice or a fresh salad for a complete meal.
