For the Pistachio Cheesecake

  • 12 oz (340 g) cream cheese, softened
  • ½ cup heavy cream, cold
  • ½ cup powdered sugar
  • ⅓ cup pistachio paste or finely ground pistachios
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 tsp gelatin powder + 2 tbsp warm water (for setting)

  • ¾ cup fresh or frozen raspberries
  • 2 tbsp sugar
  • 1 tsp lemon juice

For the Base (Optional)

  • 1 cup crushed digestive biscuits or graham crackers
  • 4 tbsp melted butter

  • Chopped pistachios
  • Fresh raspberries
  • White chocolate drizzle (optional)

Instructions

  1. Prepare the Raspberry Surprise Center: In a small saucepan over medium heat, combine fresh or frozen raspberries, sugar, and lemon juice. Cook for 6–8 minutes until the mixture thickens to a jam-like consistency. Remove from heat and allow to cool completely. Once cooled, spoon the raspberry jam into small silicone molds or ice cube trays and freeze until solid.
  2. Make the Base (Optional): In a bowl, mix the crushed digestive biscuits or graham crackers with melted butter until evenly combined. Press this mixture lightly into the bottom of dome molds to form a base. Place the molds in the refrigerator to chill and set.
  3. Bloom the Gelatin: Sprinkle the gelatin powder over 2 tablespoons of warm water. Allow it to bloom (absorb the water) for a few minutes, then gently warm until fully dissolved, being careful not to boil. Set aside.
  4. Combine the Cheesecake Mixture: In a mixing bowl, beat the softened cream cheese with powdered sugar, pistachio paste, vanilla extract, and lemon juice until smooth and well combined. Slowly beat the dissolved gelatin into this mixture to ensure even distribution.
  5. Whip the Cream: In a separate chilled bowl, whip the cold heavy cream to soft peaks. Gently fold the whipped cream into the pistachio cheesecake mixture until fully incorporated and smooth.
  6. Assemble the Domes: Spoon half of the cheesecake mixture into each dome mold, filling halfway. Insert one frozen raspberry center into the middle of each dome, then cover with the remaining cheesecake mixture, smoothing the tops evenly.
  7. Refrigerate to Set: Place the filled molds in the refrigerator for at least 6 hours or preferably overnight to allow the cheesecake domes to set firmly.
  8. Unmold and Garnish: Carefully remove the domes from their molds. Garnish each dome with chopped pistachios, fresh raspberries, and an optional drizzle of white chocolate for an elegant finish.
