Pastry Base

  • 1 rectangular puff pastry sheet (250g), defrosted
  • 1 egg, for brushing

Savory Filling

  • 2 cups fresh spinach, finely chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, grated
  • ¾ cup crumbled feta cheese
  • ½ cup ricotta
  • ½ teaspoon nutmeg
  • 1 lemon, zested
  • Salt and pepper to taste
  • ½ cup pistachios, toasted and chopped

Optional Toppings

  • 1 tsp sesame or poppy seeds
  • Extra pistachio crumbs
  • A few sprigs of fresh thyme

Instructions

  1. In a skillet, sauté garlic in olive oil until soft. Add spinach and cook until wilted. Let cool completely.
  2. Mix spinach with feta, ricotta, lemon zest, nutmeg, and pistachios. Add salt and pepper to balance.
  3. Unroll the pastry onto a lined tray. Cut a 2-inch circle in the center. From that center hole, cut outward in equal lines to form rays.
  4. Spoon the mixture evenly around the ring, avoiding the center. Fold the rays over the filling, tucking them to seal.
  5. Brush the surface with beaten egg and sprinkle toppings.
  6. Bake in a preheated oven at 200°C (390°F) for 25–30 minutes until golden brown.
  7. Cool slightly before serving. Serve warm or at room temp.

Notes

  • For a variation, try adding some sun-dried tomatoes or caramelized onions to the filling.
  • This wreath is best served fresh but can be reheated in a low oven if needed.
