  • 1/2 tsp salt

  • 2 tbsp heavy cream
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme (or fresh)
  • Pinch of salt

For the Balsamic Glaze:

  • 1/2 cup balsamic vinegar
  • 2 tbsp honey

For Garnish:

  • Fresh mint or basil leaves
  • Crushed pistachios or walnuts
  • Extra drizzle of olive oil

Instructions

  1. Prepare the Balsamic Glaze: In a small saucepan, combine balsamic vinegar and honey. Simmer over medium-low heat, stirring occasionally, until the mixture reduces by half and thickens into a syrupy glaze. Remove from heat and set aside to cool.
  2. Warm the Goat Cheese: Place goat cheese, heavy cream, olive oil, thyme, and a pinch of salt in a small pan over low heat. Stir gently and continuously until the mixture softens, becomes warm and creamy, being careful not to overheat or melt completely.
  3. Prepare the Watermelon: Pat the watermelon slices dry thoroughly with paper towels to remove excess moisture. Lightly brush both sides of each slice with olive oil, then season evenly with salt and black pepper.
  4. Grill the Watermelon: Preheat a grill pan or outdoor grill to medium-high heat. Place the watermelon slices on the grill and cook for 2 to 3 minutes per side, until distinct grill marks appear and the texture firms up slightly without becoming mushy.
  5. Assemble the Dish: Arrange the grilled watermelon steaks on a serving platter. Spoon the warm goat cheese evenly over each slice, allowing it to melt slightly on top.
