  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Cream Sauce

  • 200 ml heavy cream
  • 1 tsp Dijon mustard
  • ¼ tsp nutmeg
  • Salt and pepper to taste

Cheese Mix

  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • ½ cup shredded Gruyère or cheddar

Topping & Garnish

  • 2 tbsp chopped fresh parsley or chives
  • Extra Parmesan for top (optional)

Instructions

  1. Prep the Zucchini: Lay zucchini slices on a tray, sprinkle with salt, and let sit for 15–20 mins to draw out water. Pat dry with paper towels.
  2. Sauté the Base: In a skillet, heat olive oil over medium. Sauté onion until soft, then add garlic. Cook for 1 more minute.
  3. Make the Cream Sauce: Stir in cream, Dijon, nutmeg, salt, and pepper. Simmer for 2–3 mins, then remove from heat.
  4. Layer the Dish: Preheat oven to 200°C (400°F). In a greased baking dish, layer zucchini, spoon over cream sauce, and scatter cheese. Repeat in 2–3 layers.
  5. Top & Bake: Finish with remaining cheese and a sprinkle of Parmesan. Bake uncovered for 25–30 minutes until golden and bubbling.
  6. Garnish & Serve: Let cool slightly. Top with chopped herbs and serve warm.
