For the Crumble:
- 2 cups all-purpose flour
- 1 ½ cups rolled oats
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- ½ teaspoon baking soda
- ½ teaspoon salt
For the Filling:
- 2 cups pumpkin puree
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts (optional)
- Preheat oven and prepare the dish: Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking dish.
- Prepare the crumble: In a large bowl, mix flour, oats, 1 cup brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
