Tart Shells

  • 1 sheet refrigerated pie dough (or homemade)
  • 1 egg (for brushing)

Filling

  • 225 g (8 oz) cream cheese, softened
  • ½ cup pumpkin purée
  • ¼ cup brown sugar
  • 2 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 tsp vanilla extract

Toppings

  • Whipped cream
  • Cinnamon or nutmeg sprinkle
  • Crushed pecans (optional)

Instructions

  1. Prepare the shells: Cut pie dough into small rounds. Press into mini muffin or tart pans. Brush with beaten egg. Bake at 190°C (375°F) for 10–12 minutes until golden. Let cool.
  2. Make the filling: Beat cream cheese, pumpkin purée, sugar, syrup, spices, and vanilla until smooth and fluffy.
  3. Fill the shells: Spoon or pipe mixture into cooled tart shells.
  4. Decorate: Top with whipped cream, a sprinkle of cinnamon or nutmeg, and crushed pecans if desired.
  5. Chill: Refrigerate for at least 1 hour before serving.
