  • 200 g (7 oz) chocolate biscuits (like Oreos, without cream)
  • 80 g (5 tbsp) butter, melted

For the cheesecake filling

  • 500 g (2 cups) cream cheese, softened
  • 200 g (1 cup) sour cream
  • 150 g (¾ cup) sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp flour
  • Zest of 1 lemon (optional for balance)

For the ganache topping

  • 200 g (7 oz) dark chocolate, chopped
  • 200 ml heavy cream
  • 1 tbsp butter (for shine)

For decoration

  • Fresh raspberries
  • Assorted chocolate pieces (bars, pralines, or truffles)
  • Chocolate shavings or cookie crumbs

Instructions

  1. Make the crust – Crush biscuits into fine crumbs. Mix with melted butter until it resembles wet sand. Press firmly into the base of a springform pan (lined with parchment). Chill while preparing filling.
  2. Prepare cheesecake filling – Preheat oven to 160°C (320°F). Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and flour; mix until combined. Add eggs one at a time, mixing gently. Pour filling over crust. Bake in a water bath for 50–60 minutes, until the center is just set. Let cool, then refrigerate for at least 4 hours or overnight.
  3. Add ganache – Heat cream until steaming. Pour over chopped chocolate, let sit 2 minutes, then stir smooth. Add butter. Pour over chilled cheesecake, letting it drip over the sides.
  4. Decorate – Arrange fresh raspberries around the base and top. Add luxury chocolates or pralines in the center. Scatter with cookie crumbs or chocolate shavings for texture.
