For the Cake:

  • 2 ½ cups (310 g) all-purpose flour
  • 2 tbsp cocoa powder (unsweetened)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups (300 g) granulated sugar
  • 1 cup (240 ml) vegetable oil
  • 2 large eggs (room temperature)
  • 1 cup (240 ml) buttermilk (room temperature)
  • 1 tbsp red food coloring (gel for best color)
  • 1 tsp white vinegar
  • 2 tsp vanilla extract

For the Cream Cheese Frosting:

  • 16 oz (450 g) cream cheese (softened)
  • 1 cup (230 g) unsalted butter (softened)
  • 4 cups (480 g) powdered sugar (sifted)
  • 2 tsp vanilla extract

For Topping & Decoration:

  • Fresh strawberries (halved + whole)
  • Chocolate shavings or cocoa powder (optional)

Instructions

  1. Make the Cake – Preheat oven to 350°F (175°C). Grease and line three 8-inch round pans with parchment paper. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. In a large bowl, whisk sugar, oil, and eggs until smooth. Add buttermilk, food coloring, vinegar, and vanilla. Mix well. Gradually add dry mixture into wet ingredients, mixing until just combined (do not overmix). Divide batter evenly among pans. Bake 25–30 minutes, or until a toothpick comes out clean. Let cakes cool completely before frosting.
  2. Make the Frosting – Beat cream cheese and butter until smooth and fluffy. Gradually add powdered sugar and vanilla, beating until creamy.
  3. Assemble the Cake – Place one cake layer on a serving plate, spread frosting evenly. Repeat with the second layer, then add the third layer on top. Frost the outside and top of the cake with remaining frosting.
  4. Decoration – Garnish the top with fresh strawberries (whole + halved). Sprinkle with chocolate shavings or dust with cocoa powder for a finished look. This cake is moist, rich, tangy, and perfectly complemented by the freshness of strawberries!
