  • 2 large eggs (room temperature)
  • 240 ml (1 cup) buttermilk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring

Cream Cheese Frosting:

  • 200 g cream cheese, softened
  • 100 g unsalted butter, softened
  • 200 g powdered sugar (sifted)
  • 1 tsp vanilla extract

Decorations:

  • Fresh cranberries, blackberries, or raspberries
  • Rosemary sprigs (to look like pine leaves)
  • Powdered sugar (for snowy effect)

Instructions

  1. Bake the cake: Preheat oven to 175°C (350°F). Grease and flour a bundt or round cake pan. In a bowl, sift flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time. Mix in vanilla, vinegar, and food coloring. Add dry ingredients alternately with buttermilk, mixing just until combined. Pour into prepared pan and bake for 30–35 minutes. Let cool completely.
  2. Make frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, whip until fluffy.
  3. Decorate: Spread or pipe cream cheese frosting on top in swirls. Arrange cranberries, blackberries, and rosemary sprigs like a holiday wreath. Dust lightly with powdered sugar for a snowy effect.
