For the Roasted Beets
- 3 medium beets, peeled and cut into wedges
- 1 tbsp olive oil
- Salt & black pepper, to taste
For the Salad
- 4 cups mixed greens (arugula, spinach, or spring mix)
- ¼ cup crumbled goat cheese
- ¼ cup toasted walnuts or pecans
- 2 tbsp dried cranberries
- 1 small red onion, thinly sliced
For the Dressing
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt & pepper, to taste
- Preheat and Roast Beets: Preheat your oven to 400°F (200°C). Toss the beet wedges in olive oil, salt, and black pepper until evenly coated. Spread them on a baking sheet and roast for 25–30 minutes or until tender when pierced with a fork. Allow them to cool slightly before mixing.
- Prepare Salad Base: In a large salad bowl, combine the mixed greens, roasted beets, crumbled goat cheese, toasted walnuts or pecans, dried cranberries, and thinly sliced red onion to create a colorful and textured salad base.
- Make Dressing: In a separate small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until the dressing is emulsified and smooth.
