Ingredients

Scale

For the Roasted Carrots

  • 1 kg carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste

For the Maple Feta Drizzle

  • ½ cup crumbled feta
  • 2 tbsp Greek yogurt
  • 1 ½ tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Water as needed to thin

Optional Garnish

  • Chopped parsley
  • Toasted walnuts or pecans
  • Extra feta

Instructions

  1. Preheat Oven: Set your oven to 200°C (400°F) to prepare for roasting the carrots evenly.
  2. Prepare Carrots: In a large bowl, toss the peeled and cut carrot sticks with olive oil, smoked paprika, garlic powder, salt, and pepper until they are well coated.
  3. Roast Carrots: Spread the seasoned carrots in a single layer on a baking sheet. Roast in the oven for 25–30 minutes, turning halfway through to ensure they cook evenly and develop a caramelized, tender texture.
  4. Make Maple Feta Drizzle: While the carrots roast, combine the crumbled feta, Greek yogurt, maple syrup, lemon juice, olive oil, and garlic powder in a blender or whisk together. Add small splashes of water as needed to reach a smooth, pourable consistency.
  5. Serve: Once cooked, transfer the roasted carrots to a serving plate. Drizzle generously with the maple feta sauce over the top.
  6. Garnish: Add chopped parsley, toasted walnuts or pecans, and extra feta cheese if desired for added freshness, crunch, and flavor.
  7. Enjoy Warm: Serve the dish warm as a flavorful side dish that brightens up any meal.

Notes

  • You can substitute nuts according to preference or omit for a nut-free version.
  • Adjust the maple syrup amount in the drizzle to balance sweetness to your taste.
  • For a vegan version, replace feta and Greek yogurt with dairy-free alternatives.
  • Carrots can be roasted whole or halved if sticks are unavailable; adjust roasting time accordingly.
  • Leftover maple feta sauce can be refrigerated for up to 3 days and stirred well before use.
