For the Roasted Pears

  • 3 ripe but firm pears, cored and sliced into wedges
  • 1 tbsp olive oil
  • 1 tbsp honey
  • ¼ tsp cinnamon
  • Pinch of sea salt

For the Salad

  • 4 cups mixed winter greens (arugula, spinach, or baby kale)
  • 3 oz (85 g) blue cheese, crumbled
  • ⅓ cup toasted walnuts or pecans
  • ¼ cup dried cranberries

For the Dressing

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and black pepper, to taste

Instructions

  1. Roast the Pears: Preheat oven to 400°F (200°C). Toss pear wedges with olive oil, honey, cinnamon, and a pinch of salt. Arrange on a baking sheet and roast for 18–22 minutes until tender and lightly caramelized. Let cool slightly.
  2. Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until emulsified.
  3. Assemble the Salad: In a large bowl or serving platter, arrange the winter greens. Top with roasted pears, crumbled blue cheese, toasted nuts, and dried cranberries.
  4. Dress & Serve: Drizzle dressing over the salad just before serving. Gently toss or leave layered for a beautiful presentation.

Notes

  • Choose pears that are ripe but still firm to avoid mushy roasted fruit.
  • You can substitute blue cheese with goat cheese for a milder flavor.
  • For a nut-free version, omit the toasted nuts and add pumpkin seeds instead.
